It’s Friday Eve! Praise Jesus and a hallelujah!! Whoa mama it’s been a week for me. Like, GOOD GRIEF! Isn’t it so crazy when you start a new project how your whole life seems to change rotation? Since opening the yoga studio my schedule (and life) has been totally insane. For the last two years I’ve gotten up at 5:15am or before to get ready for the day. With this new schedule I don’t have to get up until 6:30 or 7:00 am and it is… weird. I’m enjoying it but I also feel like I’m sleeping half my morning away. Do any of you morning birds relate? I bet as I get going I will create more of a routine but for now I’ll just be over here sleeping in.
With the change in schedules I haven’t been able to meal prep so dinners this week have consisted of oh-crap-just-throw-this-in-the-oven and GO. Eric has eaten 2 frozen pizzas this week (sorry babe, although I know you don’t mind one bit).
I did manage to whip up a beautiful mac and cheese earlier this week. It was a blend of brie and cheddar cheese because that’s what I had in my fridge. I hadn’t thought of adding brie to a mac and cheese before but y’all, it’s delish.
This is a super quick and easy dish and you can always add whatever you want to beef it up. From start to finsh this took me like 45 minutes. If you want to print this delish recipe just click here.
Cheddar and Brie Mac and Cheese
Half a round oackage of Brie- rind removed
1 cup shredded cheddar cheese
1/4 cup milk
2 tbsp butter
1 tsp garlic power
1 tsp onion powder
1 tsp cayenne
1 tsp salt and pepper
1/2-1 cup bread crumbs
3 cups of cooked macaroni noodles
Preheat oven to 350 degrees.
In small saucepan combine butter, milk and both kinds of cheese. Melt on medium-high heat stirring contantly.
Stir until completely melted ad set aside. Spray a casserole dish with whatever nonstick spray you want and add your pasta. Pour cheese on top of the pasta and top with bread crumbs.
Bake for 30 minutes. Enjoy!
