Vegan Tacos and The Whole 30

Oh hello beautiful souls!

I’m finally getting into the swing of my new routine. With all the craziness going on in my life I have been eating HORRIBLY! Why does that always happen?! I made a whole batch of monkey bread recently and y’all… I ate that whole dang thing. The whole thing. And it was delicious. But then I NEEDED sugar all day, everyday, for a week straight. Stupid sugar addiction. Anyone else have this problem?

I’ve noticed that while I am working to improve my mental health I haven’t been doing everything that I can (hence the whole batch of monkey bread). I’m meditating and then eating chocolate cake. All of the chocolate cake. And then I’m wondering why I feel like crap for days afterwards.

To improve my overall health I have decided to jump on the Whole 30 train. I gave myself 2 weeks to learn about it, to shop for it, and to mentally prepare myself to break that sugar addiction. Today is day 1! AHH!

If you aren’t familiar with the whole 30 it’s basically taking away all of your favorites for 30 days.  Pasta, grains, legumes, sugar, dairy, and about a million other things. The purpose is to detox and cleanse the body so that you can run on the most optimal health. And after the Whole 30 you slowly add foods back into your diet and see how they make you feel. It’s designed for you to eat as healthily as possible and teach you to control your cravings and portions to live the best life you can live. But it’s extremely hard. I’ve done programs like this before and they usually work and make me feel awesome but I have never done one as strict as this one.

My sister-in-law, Joy, is freaking amazing. She is on her second (maybe even third) Whole 30. She has a hubby and 2 littles at home so if she can rock this then I totally can. But she’s a WAY better cook than I am. She’s pretty much the best. If y’all know Joy, give her a high-five and tell her how cool she is. She has given me some solid advice as well as some tried-and-true recipes.

Last week whole getting myself mentally prepared I whipped up some vegan tacos. I used Maltaki mushrooms as my meat substitute (you can eat meat on the Whole 30 but I hate ground meat so I use mushrooms). These mushroom are SO good. I had never had them before but I fell in LOVE.


My family is obsessed with tacos. We LOVE tacos (Especially Joy). So I wanted to share this super easy recipe with you to change your taco game FOR-EV-ERRR.

1 pack of lil guy corn tortillas

1 box of these crazy mushrooms – or 3 large portabellas – chopped and diced

coconut or olive oil

taco toppings of your choice.

In a medium skillet add a tbsp or so of olive and turn heat on medium/high. Once hot, add your mushrooms and saute for a few minutes. Add some seasoning spice, a little cayenne and salt and pepper. Place mushrooms in a bowl and set aside.

Return the skillet to the stove. Add enough oil to fry a few shells. Once it is hot fry your taco shell and place on a baking sheet. Top with whatever you want. I use onion, tomatoes, cilantro and lettuce.

Anyways, I’ll be over here dreaming about tacos for the next 30 days. I’ll have to whip up a taco salad in the meantime. Pray for me, y’all! I’ve never gone this long without sugar. I can do it though!
